Simple Beef Empanadas
1 lb ground beef
1 medium onion, chopped
1/2 tsp chili powder
1/4 tsp salt
1 can (14.5 oz)diced tomatoes with green chiles, drained
1 box refrigerated pie crusts
1/2 cup cheese
1 egg, beaten
Heat oven to 400 degrees. Brown ground beef and onion over medium heat. Drain. Stir in chili powder, salt and tomatoes. Remove from heat.
Unroll pie crusts on a parchment lined cookie sheet. Spoon about 2 cups of beef mixture onto half of each crust, spreading to within 1/2" of the edge. Top each with 1/4 cup of cheese.
Brush edge of each crust with beaten egg. Fold un-topped half of each crust over the filling; press edges down with a fork to seal. Cut slits in several places in the top and brush with beaten egg.
Bake 20-25 minutes or until golden brown. Cut into wedges and serve with sour cream
